Chewy Oatmeal Cookies with exotic sweeteners

During our recent shopping trip to a health food store I discovered two alternatives for refined processed white sugar I wanted to try out. One of them found use in this recipe for yummy soft and chewy oatmeal cookies (without raisins…eek..raisins should not be in cookies…eek…who does that?! 😉 ), unrefined sugar in the raw. The unrefined part makes the sugar look more like a pile of dirt than the sugar crystals I was used to, but the rich molasses flavor was amazing! I also used another sweetener I found last year, which is agave syrup. Agave syrup is way sweeter than sugar, so you will need less.

  • 1 cup butter at room temerature
  • 1 cup unrefined sugar in the raw
  • 1/2 cup agave syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 2 cups oats

1. Beat butter and sugars together, add eggs and vanilla.

2. Add flour, baking soda, cinnamon, salt and blend in.

3. Add oats and place table soon sized blobs on your parchment paper lined cookie sheet.

4. Place in the 375F/190C oven for 10 minutes, cool on a wire rack.
