Erna’s South African Milk Tart

My bestie Erna from South Africa shared this amazing recipe with me, it’s a custard pudding type dessert which both my daughter and my husband loved!



  • 3 heaped tbsp. cake flour (I used regular)
  • 1 tbsp. sugar
  • pinch of salt
  • 1½ tbsp. butter


  • 1 can sweetened condensed milk (14 oz. or 369 g)
  • 3 cans semi skimmed milk (long life works best) ca. 900 ml or 1 quart
  • 1 large or 2 small eggs
  • pinch of salt
  • 4 heaped tbsp. of corn starch
  • 1 tsp  vanilla essence
  • 1 tsp butter

1. Crust. Preheat the oven to 180ºC. Combine all ingredients to form a sticky dough (I used my hands because my daughter was napping, feel free to use your mixer 😉 )

2. Spread the dough onto the bottom and sides of your backing dish (I only manged to do the bottom, that is fine too). Refrigerate for 20 minutes then bake for 10-15 minutes until golden.

3. Filling: Bring condensed milk, eggs and milk to boil on low steady heat, stirring constantly with a whisk. Increase heat as mixture heats up to get to the boiling point.

4. Remove from heat and add a little of the milk mixture to the corn starch, mix thoroughly.

5. Add corn starch mixture to the milk mixture in the pot. Stirring constantly. Mixture instantly thickens.

6. Retrun to heat and bring to boil again, keep stirring. Add vanilla and butter. Keep stirring.

7. Pour mixture into the crust pan and refrigerate (you can eat it warm too, if you wish)

Sprinkle with cinnamon and enjoy!

  1. Glad you liked it :). It’s def one of our favourite traditional sweets! Next time try adding a little more cornstarch to thicken it up – it’s usually a bit firmer than your pic shows :)
