Leibniz Double Choc Copy Cat Cookies

My household is addicted to those cookies form Leibniz:

I wanted to make them myself, so we’d never run out of these little bites of heaven! The cookie part reminded me of Oreos. So I followed the recipe for homemade oreos over at cupcakeproject.com who modified a recipe from Retro Dessert by Wayne Brachman. The chocolate topping was easy to find – an Army of left over chocolate Santa Clauses and Easter bunnies got sacrificed – they melted willingly!

Ingredients:

  • 1 1/4 cups flour
  • 1/2 cup unsweetened cocoa
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup butter, room temperature
  • 1 egg
  • 100g good milk chocolate

1. Preheat the oven to 375 F

2. Mix the flour, cocoa, baking soda and powder, salt, and sugar.

3. Add the butter and the egg. Continue mixing until dough comes together in a mass, this will take a while, don’t give up, keep beating! (this is when you wish you had a stand mixer – well this is when I wished I had one anyways)

4. You will end up with a dough you can roll out and use cookie cutters to make shapes – or a shot glass like I did 😉

5. Place the cookies about 4 cm apart and put them in the oven for 9 minutes.

6. Remove and let cool completely.

7. In a double boiler (Wasserbad) melt the chocolate. Then spread it on the cool cookies and let dry. I made some that were like the Leibniz ones, rectangular with choco on top and I made some that were more Oreo style with the choco as the center of a cookie sandwich.

I only have this one picture because they were all gone before I could take any more. They are THAT good. I promise!
